Best GF Christmas Cut-out Cookies Ever

(makes 8-9 dozen)
Preheat oven to 350 degrees.
1 cup melted margarine, cooled slightly
2 cups sugar
1 cup gf sour cream
2 eggs
3 tsp. vanilla
5 – 5 ½ cups gf flour (I use combined ½ Bette’s Original Flour Mix and
½ Bette’s Four Flour Blend Mix)
1 tsp. baking soda
1 tsp. xanthan gum
In a large bowl, cream margarine & sugar until well blended.
Add eggs, vanilla and sour cream and mix well.
In separate bowl, mix flour, baking soda & xanthan gum with a wire whisk.
Add flour mixture a little at a time to the wet ingredients. Mix well.
Dough will be sticky.
Chill overnight or at least 2 hours.
Roll out, cut out and bake 5 – 10 min. at 350 degrees.
Frosting:
1 stick margarine – room temperature
2 Tblsp. vanilla
¼ c. milk
1 bag (1#) confectioners sugar (1# bag = 3 ¾ cups)
Mix all together well. Add more milk if necessary ¼ tsp. at a time. I mix
this in my mixer until fluffy.
Put into separate small bowls and add food coloring and mix well.
Frost cookies. Enjoy!
