cup egg whites (7 large eggs)..save the yolks
½ tsp. Baking soda
1 tsp. Cream of tartar
½ cup sugar
egg yolks (from the whites)
½ cup water
1 tsp. Vanilla
2/4 cup tapioca flour
½ cup white rice flour
1 cup sugar
1 ¼ tsp baking powder
1 ½ tsp. Xanthan gum
Beat
egg white until stiff & continue beating as you add the baking soda, cream
of tartar and ½ cup sugar.
Set
Aside
Beat
egg yolks (not too long), add water & vanilla, continue to beat on low as
you add flours, 1 cup sugar, baking powder & xanthan gum.
Fold
egg yolk mixture into egg whites.
Pour
into ungreased angel food cake pan.
Bake
on bottom rack at 350 degrees for 35-45 minutes.
Turn
upside down to cool.
Serve
with berries & whip cream frosting.
Can
be frozen.
